15 Minute Lo Mein

Who doesn't love lo mein? Now you can make it at home, quicker than you can call and order for it. And you can customize it as you wish!


Total Time: 15 Minutes (Prep - 5-7 Minutes / Cook - 8 - 10 Minutes)

Ingredients


For the sauce

  • 2 tablespoons dark soy sauce

  • 1 tablespoon light soy sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon sugar


For the lo mein

  • 4-6 ounces uncookes ramen noodl3es

  • 1 tablespoon sesame oil

  • 3 green onions, chopped (sepatare green parts from the white)

  • 2-3 cups julienne cut or chopped vegetables (carrots, red peppers, cabbage, bok choy, mushrooms and/or broccoli)

  • 1-2 tablespoons mirin


Instructions

  1. Shake all the sauce ingredients together in a jar. Set aside.

  2. Cook the noodles according to the packages direction. Drain and set aside.

  3. Heat the sesame oil in a large wok or skillet. Add the green onions (white parts) and vegetables to the hot pan. Stir fry until fork-tender, about 5 minutes.

  4. Add the mirin to loosen the browned bits from the bottom of the pan. Add the cooked noodles and about half of the sauce - toss around in the hot pan to combine. Add more sauce if needed and serve when ready.

Tips

* This is a great base/vegetarian dish, but feel free to add any protein you desire (chicken, shrimp, eggs, etc). Just be sure to cook the protein first and set aside, then add in the end with the noodles.

* Gauge how much sauce your dish needs by the color of the noodles. You want your noodles to be a medium brown color, not too light, not too dark.
