This has become one of my go-to side dishes for meal prep. Depending on the type of mushroom you get can make a difference in the flavor of the rice.
Total Time: 45 Minutes (Prep - 10 Minutes / Cook - 35 Minutes)

Ingredients
1 1/3 lb mushrooms, quartered
3 1/2 tablespoons butter, hot and melted
2-3 garlic cloves
Salt and pepper
1 1/2 tablespoons olive oil
1 1/2 cups long grain rice, uncooked
1 1/2 cups chicken or vegetable broth
1 1/4 cups water
1 teaspoon dried thyme
1 teaspoon garlic powder
Instructions
Preheat oven to 350 degrees.
Place mushrooms in a large bowl. Pour over hot melted butter, add garlic, salt and pepper. Toss well.
Place rice, chicken or vegetable broth, water, thyme and garlic powder into a baking pan. Mix and shake the pan to spread out the rice evenly.
Spread the mushrooms over the rice. Drizzle with olive oil.
Bake for 35-40 minutes or until the mushrooms on top are golden brown. Remove from oven and let rest for 5 minutes.
Tips
* If you want to use brown rice instead of white rice, bake the rice covered with foil for 30 minutes first. Then remove the foil, add mushrooms and bake uncovered for 30-35 minutes.
