I was that kid who hated broccoli growing up. It wasn't until I began cooking on my own as an adult that I learned to appreciate it. Here's a neat way to sneak them into a meal.
Total Time: 30 Minutes (Prep - 10 Minutes / Cook - 20 Minutes)
Servings: 24 Muffins
Ingredients
1 1/2 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 tablespoons sugar
1/2 cup grated or blended raw broccoli florets
3 cups grated cheddar cheese
1 cup milk
1 egg
1/2 stick of melted unsalted butter
Instructions
Preheat oven to 375 degrees.
In a bowl, mix the flour, baking powder, sugar, broccoli and cheese. In another bowl, mix milk, egg and melted butter.
Mix flour mixture and milk mixture until well combined.
Grease muffin tin and fill 3/4 of the way (enough room for the rising)
Bake for 20-25 minutes or until toothpick comes out clean.
