Rice is a major staple in a lot of Mexican dishes and this will make a quick, easy and delicious side dish to any Mexican feast you prepare.

Ingredients
1 1/2 cups frozen or fresh corn
1 (15oz) can black beans, drained and rinsed
3 cups whole grain brown rice
1 tablespoon chili powder
1 cup salsa
Instructions
Preheat a large skillet over medium heat. Add corn and black beans and cook until corn is tender, about 3 minutes.
Add rice and chili powder and stir to combine. Cook, stirring constantly about 3 minutes.
Stir in salsa and cook until everything is combined and warmed through, about 2 minutes.
Remove from heat and let cool for 5-10 minutes.
Tips
* The best rice for this dish is Minute Ready to Serve rice or a quick cooking rice product. However, you can also use leftover brown rice and warm it up.
* You can garnish the rice with cilantro or avocado.
