Healthy Carrot Cake Oatmeal Cookies

Who doesn't love a warm, moist carrot cake? But they take too long to make. So, these cookies will make a perfect replacement that can be done in about an hour and give you the same flavor profile.
Total Time: 1 Hour (Prep - 45 Minutes, including chill time / Cook - 15 Minutes)
Servings: 14 cookies
Ingredients
1 cup instant oats
3/4 cup whole wheat flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons unsalted butter
1 large egg, room temperature
1 teaspoon vanilla
1/2 cup pure maple syrup
3/4 cup grated carrots, peeled
Instructions
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon and salt. In a separate bowl, whisk together the butter, egg and vanilla. Stir in the maple syrup until thoroughly incorporated.
Add in the flour mixture, stirring until incorporated. Fold in the carrots. Chill the dough for at least 30 minutes. If you chill longer, cover with plastic wrap, ensuring it touches the entire surface of the cookie dough.
Preheat the oven to 325 degrees and line a baking sheet with parchment paper. Drop the cookie dough into 14 rounded scoops on the baking sheet.
Bake at 325 degrees for 12-15 minutes. Cool on the baking sheet for at least 15 minutes before serving.
