Shrimp Avocado Salad

Salad should not be a boring dish. This is the perfect salad to serve in summer, when it's too hot to turn the oven or stove on. Just imagine, sitting on the back porch, salad in a glass bowl, sipping on your lemon water or peach iced tea...

Ingredients
For the Salad
1/4 cup diced red onion
1/4 cup diced cucumber
1 pound cook shrimp, peeled, tails off, de-veined and chopped
1/2 avocado, diced
2 sun-dried tomatoes, minced
1 clove garlic, minced or pressed
For the Dressing
1 tablespoon lemon juice
1 tablespoon red wine vinegar
1 teaspoon oil from sun-dried tomato jar
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried dill
1/2 teaspoon salt
Instructions
Whisk together dressing ingredients and set aside.
Place all salad ingredients into a large bowl.
Pour sauce over ingredients and toss to combine.
Taste and re-season, if needed.
