Southwestern Salad with Avocado Dressing

Homemade dressing and a nice kick of flavor in the mouth? Done in no more than 15 minutes? This is not your average salad; you'll want to make this one again and again - and there is no cooking involved!


Total Time: 15 Minutes (Prep - 15 Minutes)

Servings: 5


Ingredients

For the dressing

  • 1 avocado, halfed

  • 1 clove, garlic

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/4 cup olive oil

  • 1 tablespoon fresh cilantro

  • 1 lime, juiced


For the salad

  • 1 head of lettuce, chopped

  • 1 cup bell pepper, chopped

  • 1/4 cup fresh cilantro

  • 1 can (15oz) black beans

  • 1/2 cup red onion, chopped

  • 1 can (15oz) corn

  • 1/4 cup scallion

  • 3/4 cup tomato, chopped


Instructions

  1. Add all the dressing ingredients to a lender and blend until smooth.

  2. In a large bowl, add lettuce, peppers, cilantro, beans, onions, corn, green onion and tomatoes.

  3. Top with prepared dressing and toss to coat. Serve and enjoy.

Tip

* Throw the avocado on the grill or in a skillet for 1-2 minutes before adding to the blender to add a nice, smoky flavor to the dressing and the salad. * If you want to add more crunch or protein, you can add meat like grilled chicken, fish, shrimp or steak, or you can add chickpeas.
