Cheeseburger Meatloaf

Imagine the taste and flavor of a bacon cheeseburger formed in individual meatloaves. This is sure to be a hit with the family.


Total Time: 45 Minutes (Prep -15 Minutes / Cook -30 Minutes)

Servings: 4


Ingredients

  • 1-1/4 lbs ground beef

  • 2 teaspoons olive oil

  • 1/2 cup finely diced onion

  • 1/2 cup cooked, crumbled bacon

  • 1/4 cup panko breadcrumbs

  • 1 tablespoon yellow mustard

  • 1 tablespoon worcestershire sauce

  • Salt and black pepper to taste

  • 1 egg

  • 1/2 cup cheddar cheese, cut into small cubes

  • 4 tablespoons ketchup


Instructions

  1. Preheat the oven to 350 degrees. Line a sheet pan with foil and coat with cooking spray.

  2. Heat the olive oil in a small pan over medium heat. Add the onion and cook for 4-5 minutes or until golden brown.

  3. Remove from the heat and stir in the mustard and worcestershire sauce.

  4. In a large bowl, combine the onion mixture, beef, bacon, panko breadcrumbs, salt, pepper, egg, 2 tablespoons of water and cheddar cheese. Mix together until well blended.

  5. Form 4 individual meatloaves and place on prepared sheet pan. Spread 1 tablespoon of ketchup over each meatloaf.

  6. Bake for 20-25 minutes or until cooked through. Serve hot.
