Citrus Shrimp and Avocado Salad

With spring in the air and summer around the corner, it's time to lighten your lunch a little bit. This is the perfect salad to enjoy on a warm spring day outside your office, with plenty of delicious and refreshing flavors.


Total Time: 5-10 Minutes (Prep - 5 Minutes / Cook - 5 Minutes)

Servings: 4


Ingredients

  • 1lb medium shrimp, cooked

  • 8 cups greens (such as arugula, spinach or spring mix)

  • Fruity or lemon-flavored extra virgin olive-oil

  • Juice of 1/2 lemon or 1/2 orange

  • 1 avocado, sliced or diced

  • 1 shallot

  • 4 ounces sliced almonds, toasted

  • Kosher salt and freshly ground black pepper


Instructions

  1. Toss the shrimp with the salad greens in a large bowl.

  2. Lightly drizzle with olive oil. Add a squeeze of citrus and toss lightly to coat.

  3. Add the avocado, shallots and almonds and then season with salt and pepper and serve.
