Low Carb Fish Taco Bowls

This easy taco bowl gives you the flavors you love in tacos, without all the mess, but also with a light and fresh twist. And this is the perfect dish to make for a meal-prep menu.
Total Time: 45 Minutes (Prep - 20 Minutes/Cook - 25 Minutes)

Ingredients
- 4 frozen cod fillets 
- 2 tablespoons melted butter 
- 2 tablespoons taco seasoning 
- 1/4 cup sour cream 
- 1 1/2 teaspoons lime juice 
- 1 teaspoon honey 
- 1 tablespoon milk 
- Pinch of salt 
- 2 cups rice 
- 2 cups coleslaw (optional) 
- 1 avocado sliced 
- 1/4 cup chopped cilantro, for garnish 
Instructions
- Preheat the oven to 400 degrees. Line a sheet pan with foil. 
- Mix together the melted butter and taco seasoning. Brush on the frozen fillets. Bake for 25 minutes. 
- Whisk together the sour cream, lime juice, honey, milk and salt. 
- Fill 4 bowls with 1/2 cup rice, 1/2 cup coleslaw, 1 fish fillet and some avocado. 
Tips
* Feel free to add whatever else you want to top to your taco bowl (such as red onions, salsa, extra sour cream, cheese, etc.)
