Spicy Peanut Noodles

There is plenty of heat and spicy in this quick and easy pasta dish that can be eaten hot or cold.


NOTE: There are no actual peanuts in this dish, but if you have an allergy to peanut butter, don't try this dish.


Total Time: 15 Minutes (Prep - 5 Minutes / Cook - 10 Minutes)

Servings: 6


Ingredients

  • 16 ounces brown rice noodles (or any pasta you desire)

  • 2 cloves garlic

  • 1 tablespoon oil

  • 2/3 cup creamy peanut butter

  • 1/3 cup lo sodium soy sauce

  • 1/4 cup water

  • 1 tablespoon rice vinegar

  • 1 tablespoon toasted sesame oil

  • 2 tablespoon sriracha

  • 1 tablespoon maple syrup or honey

  • 1/2 teaspoon red pepper flakes


Instructions

  1. Bring a large pot of water to a boil and cook noodles according to package instructions.

  2. Finely mince the garlic and add to a saute pan with 1 tablespoon of oil (any oil of your choice).

  3. Saute over low heat for 2-3 minutes or until golden brown.

  4. Add in all remaining sauce ingredients and whisk together until smooth.

  5. Add about 1/2 of the sauce to cooked pasta and mix together.


Tips

* Start with only adding half the sauce in case you add any other ingredients into the dish, including vegetables, chicken, steak cubes, etc.
