Stuffed peppers are a very familiar bell pepper dish - and you can stuff them with whatever you choose. This was a recipe I made up one night after a major hurricane came through and only my house (among my frineds) had power.
Total Time: 1 Hour, 20 Minutes (Prep - 20 Minutes / Cook - 1 Hour)
Servings: 6
Ingredients
6 green bell peppers (or whatever color you want)
2 tablespoons olive oil
1 onion, diced
1lb ground turkey
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 can fire roasted corn, drained
1 can black beans, drained
2 8oz can tomato sauce
2 cups shredded Mexican blend cheese
Instructions
Heat up oil over medium high heat. Add onion and cook down until translucent, about 3-5 minutes.
Cook ground turkey until no longer pink, about 12-15 minutes. Season with Worcestershire sauce, garlic powder, salt and black pepper.
Preheat over to 350 degrees. Cut top off bell peppers and clean out seeds and membrane. Arrange them in a baking pan upright.
Fill peppers with turkey. Evenly divide drained corn, black beans and tomato sauce between the bell peppers.
Bake in the oven for 55 minutes. For the last five minutes of the cook time, add shredded cheese and return to oven.
Remove from the oven and let cool for 10 minutes.
