Vegan Tomato Soup

Nothing is more classic and iconic than pairing a tomato soup with a grilled cheese sandwich. This vegan tomato soup pairs well with my BBQ Chicken Grilled Cheese Sandwich.


Total Time: 40 Minutes (Prep - 10 Minutes / Cook - 30 Minutes)

Servings: 4 servings


Ingredients

  • 1 tablespoon coconut oil

  • 1 onion, chopped)

  • 1 teaspoon crushed garlic

  • 1 teaspoon oregano

  • 1 teaspoon dried basil

  • 2 14oz cans whole peeled tomatoes

  • 2 tablespoons brown sugar

  • 2 large potatoes

  • 2 cups vegetable stock

  • Fresh basil, for serving

Instructions

  1. Add the onion and garlic to a pot with the coconut oil and sauté. Add in the oregano and dried basil and sauté until the onions are softened.

  2. Add the tomatoes, potatoes, sugar and vegetable stock.

  3. Bring to the boil and then turn down to simmer until all the ingredients are soft and cooked for about 30 minutes.

  4. Using an immersion blender, blend into a smooth soup. If you don’t have an immersion blender, then transfer to a blender jug and blend it up in stages and return to the pot.

  5. Serve with a sprinkle of dried basil and dried oregano and fresh basil leaves.
