Orange is the color for this season, and not just because of the leave and pumpkins.


Carrots are another popular orange food that you will find on many tables during this season. But they are good at any time of the year. They start growing in the spring and last through the fall. While fresh in the spring, they are at their peak in October and November.


I'm pretty sure growing up, you were told that carrots were good for your eyes. Is that actually true? Actually it is. Because carrots contain vitamin A, which is a key vitamin that improves eye health.


But there are other health benefits linked to consuming carrots too. Another awesome low calorie and low carb option to consider, carrots promote weight loss and keep you full longer thanks to the fiber found in the vegetable. These are the perfect low calorie snack to include in a healthy eating lifestyle.


Because carrots are a simple and easy vegetable, it's a great addition to the dinner plate. Whether you serve them alone or add them to a soup or stew or vegetable plate, they are an easy way to boost the vegetable content of a dish while not adding an excess of calories to the dish.
