Let's be real ... how can you NOT love potatoes?
They come in so many different shapes and forms; fries, wedges, mashed, baked, roasted, etc. They can be dressed up so many different ways; with butter, garlic, cheese, ketchup, mustard, your favorite dipping sauce.
And they are so unhealthy for you too ... wait, hold up. Is that really true?
Okay, I get it, you're thinking of how a single carb-loaded French fry will ruin all of your hard work. I thought the same way. But with any thing you eat, moderation is key. A container of waffle fries from Chick-Fil-A about once every other week as a treat won't undo everything you have worked for (now if you eat it every day, that's a different story).
Actually, potatoes don't deserve the negative reputation that they deserve. If you strip away the bacon bits, the sour cream, the butter and the cheese from your average baked potato (although, why would you do that?), the actual potato itself is very low in calories (roughly 100-110 calories), filled with nutriets and vitamins. And, because is is a carb-loaded option, it will take longer to digest and keeps you full for longer. Sometimes, when a person is "bulking" (gaining weight/muscle), potatoes is a favorite vegetable to add to a meal due to its bulking agent in a diet.
See, potatoes aren't as bad as you thought. But wait ... there is more.
If you have ever actually gone to the store to shop for potatoes, you might have noticed a variety of option available to you. And you might think they are all the same essentially, just different colors.
Ahhh, my foodie friend, remember that sugar also looks like salt (never heard that before? I'll explain later to you).
These different colors and types of potatoes each serve a unique purpose in the kitchen. They each bring a different taste and flavor to a dish and it's important to know what those are when cooking, so you can get the right potato. This blog from a culinary scientist will offer some more in-depth insight on the different types of potato you have to choose from. Pay close attention to the specific potato in the recipe.
We about the love of potatoes here, no matter what size or the fry!
